For dinner tonight I made one of my favorites… Squash Spaghetti. Yum yum!!! It’s a really good healthy, Weight Watcher meal, and in our case it feeds a big family well!!
My recipe:
Spaghetti Squash:
First this, preheat your oven to 400 degrees. Cut the spaghetti squash in half, take out the seeds & center stringy stuff, place it inside face down on a cookie sheet with about at least one cup of water on the cookie sheet. Bake for 45 minutes.
Spaghetti Meat Sauce:
I used a little over 1 lb of ground beef (I usually use ground turkey and sometimes use 2 lbs, it’s just what I had this time). While browning the meat in a little olive oil I added 2 cloves of garlic chopped, 1 chopped onion & some mushrooms chopped. You could put bell pepper, in it as well. I let everything cook together, probably 15 mins or so.
Then I add two cans of 15 oz tomato sauce or your own sauce, half a cup of water, salt to taste, and about 2 teaspoons of brown sugar. Let that simmer until squash is done.
When squash is ready, take out of oven (it will be squishy when pushed), scrape into the pot of meat sauce. Add mozzarella and sprinkle with Parmesan cheese. Voilà! It’s REALLY good! My kids actually eat it up with out complaint and I prefer the squash over pasta!
My husband REALLY DOES likes it and he is a meat and potato guy! Yay!
